1-1/2 cups quinoa
2 pkg (each 8 oz.) Crab Classic, Chunk Style
1 cup chopped cucumber
1 cup halved cherry tomatoes
4 green onions, sliced diagonally
1/3 cup prepared Italian vinaigrette
1/2 cup finely cubed feta cheese (optional)
Cook quinoa according to package directions; let cool completely.
In large bowl, combine quinoa, crab, cucumber, tomatoes and green onions; toss with vinaigrette. Garnish with feta cheese if desired.
