Crab Classic Breakfast Burrito
Ingredients
8 oz. Crab Classic, leg style, hand shredded
1/2 cup canned black beans, drained and rinsed
1 tbsp lime juice
1/2 cup prepared guacamole
4 large whole wheat tortillas
6 eggs, scrambled
1 cup shredded Cheddar cheese
4 slices bacon, cooked and crumbled
Directions
Mash black beans with lime juice; set aside. Spread guacamole down along center of each tortilla. Top evenly with scrambled eggs, crab, Cheddar, beans and bacon. Fold up bottom of tortilla over filling, then fold in sides and roll up tightly into a burrito. Preheat panini press according to manufacturer’s instructions. Toast burritos in panini press until cheese has melted and wrap is golden brown. (Or, wrap in foil and heat in preheated 425˚oven for about 10 minutes or until filling is heated through and cheese melts).
