Crab Classic, Zucchini & Goat Cheese Frittata
Ingredients
8 oz. Crab Classic, flake style, hand shredded
1 tbsp olive oil
1 onion, chopped
1 medium zucchini, sliced
8 eggs
1/2 cup milk
1 tsp dried oregano
1/4 tsp each salt and pepper
1/2 cup crumbled goat cheese
Directions
Preheat oven to 350°F. Heat oil in large nonstick ovenproof skillet set over medium heat; cook onion and zucchini, stirring occasionally, for 3 to 5 minutes or until softened. In bowl, whisk together eggs, milk, oregano, salt and pepper. Pour mixture into skillet; cook over medium-high heat for about 3 minutes or until eggs start to set on bottom and around edges. Sprinkle crab and goat cheese over top; transfer to oven. Cook for 13 to 15 minutes or until eggs are set; cut into wedges.
Serves 6
