Kale & Crab Classic Dip with Parmesan Cheese
Ingredients
8 oz. Crab Classic, flake style
2 tsp. olive oil
2 cups finely stemmed and shredded kale
1 tbsp. minced garlic
½ tsp. each salt and freshly ground pepper
8 oz. low fat cream cheese, at room temperature
1 cup light mayonnaise
2 tbsp/ lemon juice
¼ cup Parmesan cheese
1 tsp. finely grated lemon zest
1 tbsp. chopped fresh parsley
vegetable crudite and crostini, for serving
Directions
Heat oil in large skillet set over medium heat. Cook kale, garlic, salt and pepper for 3 to 4 minutes, or until wilted. Cool and squeeze to remove excess moisture; set aside. Preheat oven to 400 °F. Grease a small 4 cup baking dish; set aside. Whip cream cheese with mayonnaise. Stir in Crab Classic, kale and lemon juice. Scrape into baking dish; smooth top. Sprinkle Parmesan, and lemon zest over dip. Bake for 20 minutes, or until bubbly. Broil on high for 2 to 4 minutes, or until golden brown on top. Garnish with parsley. Serve dip with crudité and crostini.
