Lentil and Quinoa Crab Classic Bowl
Ingredients
4 oz. Crab Classic, flake style
1/3 cup olive oil
3 tbsp. lime juice
¼ tsp. salt
1 cup cherry tomatoes, halved
2 cups cooked quinoa
1 can (19oz.) lentils, drained and rinsed
¼ cup mixed fresh herbs, finely chopped, divided (parsley, cilantro, chives)
1 ripe avocado, peeled, pitted and sliced
¼ cup goat cheese, finely crumbled
4 eggs, poached (optional)
Directions
Whisk together olive oil, lime juice and salt. Toss crab and tomatoes with 2 tbsp dressing; set aside. Toss quinoa, lentils and mixed herbs with remaining dressing. Divide quinoa mixture among 4 bowls. Top evenly with Crab Classic mixture, avocado and goat cheese. Top with poached eggs (if using). Sprinkle with remaining mixed herbs.
