12 oz. penne
2 tbsp butter
1 small onion, finely chopped
1/4 cup vodka
2 tbsp tomato paste
1 can (14 oz) diced plum tomatoes
1/2 cup 35% whipping cream
1/4 tsp each salt and freshly ground pepper
1 pkg (8 oz.) Crab Classic, Chunk Style
1/4 cup Parmesan cheese
1/4 cup finely chopped fresh basil
1/2 tsp chili flakes (optional)
Cook penne according to package directions. Drain pasta, reserving 1/3 cup pasta water.
Meanwhile, melt butter in a large skillet over medium heat. Cook onions for 3 to 5 minutes or until tender. Remove skillet from heat. Add vodka. Transfer back to heat. Add tomato paste. Cook for 1 minute. Stir in diced tomatoes; bring to a boil. Simmer for 5 minutes. Add cream, salt and pepper. Simmer for 5 minutes.
Add pasta, pasta water and crab. Toss to coat. Stir Parmesan cheese and basil. Top with chili flakes, if using.
Tip: If desired omit vodka, substitute with white wine or chicken broth.
