Crab Classic Egg Bites
Perfect for busy mornings, these crab-and-veg-studded breakfast bites are a breeze to make and can be packed to grab-and-go.

Ingredients
5 eggs
2 tbsp milk
1/2 tsp salt
1/2 tsp black pepper
1 pkg (8 oz) Crab Classic, Chunk Style*, chopped
4 cherry tomatoes, quartered
2 green onions, thinly sliced
1/2 cup packed chopped spinach
1/4 cup finely diced red bell pepper
2 tbsp finely chopped fresh chives
Directions
Preheat oven to 375°F.
In large bowl, whisk together eggs, milk, salt and pepper. Stir in crab, tomatoes, green onion, spinach and red pepper. Let stand for 5 minutes (this will help wilt spinach).
Stir egg mixture, then divide among 24 greased mini muffin cups.
Bake 12 to 15 minutes or until puffed and set. Let cool for 5 minutes, then remove from pan. Garnish with chives.
Tip: For make-ahead breakfast, let cooked egg bites cool completely. Refrigerate in airtight container for up to 3 days or freeze for up to 2 weeks. Serve at room temperature or heat in microwave until warmed through.
*Note: Crab Classic can be replaced by Crab Supreme or Simply Surimi in any of our recipes.
