Total Time: 50 minutes
Serves: 6
Ingredients
8 oz plain cream cheese, softened
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1 pkg (8 oz) Crab Classic*, Chunk Style, hand shredded
4 green onions, thinly sliced
1/2 cup frozen corn, thawed
1 egg
1 pkg (14.1 oz) refrigerated rolled pie crust
4 tsp olive oil
Directions
In medium bowl, stir together cream cheese, chili powder, garlic powder, salt and pepper. Add crab, green onions and corn; stir until combined.
In small bowl, whisk together egg and 1 tbsp water.
On lightly floured work surface, working with one rolled crust at a time, cut pastry into rounds using 6-inch cookie cutter, rerolling scraps as needed to make 6 rounds.
Brush edges of each round with some of the egg wash. Divide crab mixture among centers of each round. Fold pastry in half to create half-moon bundles and enclose filling. Using fork, crimp edges to seal. Transfer to parchment paper–lined baking sheet. (If pastry is soft, chill in freezer for a few minutes.)
Preheat air fryer to 400°F according to manufacturer’s instructions. In batches to avoid crowding, arrange empanadas in air-fryer basket and drizzle with some of the oil. Air-fry empanadas, flipping once, for 10 to 15 minutes or until golden brown and filling is heated through. Let cool for 5 minutes before serving.
Tip: Serve empanadas with salsa, guacamole or chimichurri for dipping if desired.
*Note: Crab Classic can be replaced by Crab Supreme or Simply Surimi in any of our recipes.
