Crab Classic Pasta Salad with Kale Pesto
With zesty Mediterranean flavors, this hearty crab pasta salad makes a quick and easy lunch or dinner.

Ingredients
12 oz rotini pasta
1 cup packed baby kale
1/2 cup basil pesto
1/4 cup freshly squeezed lemon juice
1 pkg (8 oz) Crab Classic, Flake Style*
1 jar (6 oz) oil-packed artichoke hearts, drained and chopped
2 cups packed baby arugula
2 cups halved cherry tomatoes
1/4 cup finely diced red onion
1/3 cup crumbled feta cheese
Directions
Cook rotini according to package directions; drain and rinse under cold water to stop the cooking process. Let cool completely.
In small food processor or blender, pulse together kale, pesto and lemon juice until smooth.
In large bowl, toss rotini with pesto mixture. Stir in crab, artichokes, arugula, tomatoes and onion. Garnish with feta before serving.
Tip: Substitute the artichoke hearts for olive slices, chopped sun-dried tomatoes or diced roasted red pepper.
*Note: Crab Classic can be replaced by Crab Supreme or Simply Surimi in any of our recipes.
