Crab Classic Power Bowl
Ingredients
8 oz. Crab Classic, flake style
6 cups baby spinach
3 cups cooked quinoa
2 ripe avocados, sliced
1 cup thinly sliced English cucumber
1 cup drained and rinsed canned chick peas
Dressing
2 tbsp. red wine vinegar
1 clove garlic, minced
½ tsp. Dijon mustard
¼ tsp. each salt and pepper
1/3 cup extra virgin olive oil
1 tbsp/ each chopped chives and parsley
Directions
Herb Vinaigrette: In bowl, whisk vinegar with garlic, mustard, salt and pepper. Slowly whisk in olive oil until blended. Stir in chives and parsley. Toss quinoa with half of the dressing. Divide spinach among 4 bowls. Top each with 3/4 cup quinoa, ½ sliced avocado, cucumber and chick peas. Top each with crab classic. Drizzle remaining vinaigrette evenly over each bowl.
