Crab, Spinach and Mozzarella Omelet
as needed no-stick cooking spray
3/4 cup egg substitute or egg whites, beaten
1/4 cup spinach leaves, chopped
1/4 cup (2 oz) Crab Classic Chunk Style
1/8 cup (1 oz) low fat mozzarella cheese
salt and pepper to taste
Spray a small nonstick pan with cooking spray; heat on medium until hot. Add eggs to pan and cook until egg mixture is starting to set. Then add spinach, Crab Classic and cheese. Cook over low heat until eggs are firm and cheese starts to melt. Fold omelet to seal and season with salt and pepper.
