Rice Paper Crab Classic Salad Rolls
8 oz. Crab Classic, leg style
8 rice paper wraps
2 cups shredded Boston lettuce
1 cup shredded carrot
1 red pepper, cut into matchsticks
1/2 English cucumber, cut into matchsticks
Soak 1 rice paper wrap in hot tap water for about 10 seconds or until pliable; transfer carefully to slightly damp kitchen towel. Arrange some of the lettuce, carrot, red pepper, cucumber and crab in center of wrap, leaving small border around edge. Firmly fold bottom of wrap over the filling, fold in sides and roll up to enclose filling completely. Repeat with remaining ingredients. Cover tightly with plastic wrap and refrigerate for up to 2 hours. To serve, cut in half diagonally.
