Turkish-Style Eggs with Crab Classic
With creamy Greek yogurt and spiced chili oil, this take on a classic Turkish dish with Crab Classic delivers a flavorful, fragrant and luxurious meal that’s packed with protein.

Ingredients
Yogurt Spread:
1 cup plain Greek yogurt
1/2 tsp lemon zest
1 tbsp lemon juice
1 clove garlic, minced
1/4 tsp each salt and pepper
Spiced Oil:
1/4 cup olive oil
1 tbsp crushed dried Aleppo pepper
1 clove garlic, minced
1/4 tsp ground cumin
Poached Eggs and Crab:
1 tbsp apple cider vinegar
4 eggs
1/4 tsp salt
1 cup Crab Classic, Flake Style*
1 tbsp coarsely chopped fresh dill
1 tbsp coarsely chopped fresh parsley
2 pita breads, toasted (7 inches)
Directions
Yogurt Spread: In small bowl, stir together yogurt, lemon zest, lemon juice, garlic, salt and pepper.
Spiced Oil: In small saucepan set over medium-low heat, heat oil. Stir in Aleppo pepper, garlic and cumin. Cook, stirring occasionally, for 2 to 3 minutes or until fragrant.
Poached Eggs and Crab: Fill a saucepan with enough water to reach 3 inches up sides of pan; stir in vinegar and bring to a simmer over medium heat.
Break each egg into a small dish or saucer. Vigorously stir water to create a vortex. Holding dish just above simmering water, slip each egg into the water. Reduce heat to medium-low. Cook eggs, undisturbed, in barely simmering water for 3 to 4 minutes or until whites are set and yolks are still runny (alternatively, cook to preferred doneness). Using slotted spoon, transfer eggs to paper towel–lined plate to drain (keep saucepan over heat). Season eggs with salt.
Immediately add crab to poaching liquid. Cook, stirring occasionally, for 1 to 2 minutes or until warmed through. Transfer to paper towel–lined plated to drain.
To serve, divide yogurt between 2 shallow bowls, spreading to create a well in center of each. Nestle 2 poached eggs in center of each bowl and top with crab. Drizzle with spiced oil and garnish with dill and parsley. Serve with pita bread.
Tips: Alternatively, serve with toasted sourdough bread or sesame seed bagels.
Aleppo pepper is a mild chili with an earthy, fruity flavor; it’s common in the Middle East and Turkey. To mimic similar flavors, substitute with 1/4 tsp red chili flakes, 1/4 tsp smoked paprika and 1/4 tsp regular paprika
